Dark Chocolate Peppermint Cookies

More to come on my cookie swap soon but here is the recipe for the cookies I made last week. A few years ago one of my friends made a chocolate peppermint cookie which was delicious and my inspiration for this creation. Originally I wanted to use the candy cane flavored Hershey kisses but my store was out of stock so instead I got classic kisses and crushed up peppermint candy to sprinkle on top. In my opinion they came out well and are a relatively easy cookie to make. Below is the recipe, leave a comment if you give these a try!

Ingredients:

48 Hershey’s Kisses (Preferably candy cane flavored, but any type will work)

2 ¼ cups All-Purpose Flour

⅓ cup Unsweetened Cocoa Powder (used dark chocolate hot chocolate mix)

1 cup of semi-sweet mini chocolate chips

1 tsp baking soda

½ tsp salt

½ cup (1 stick) unsalted butter, softened

¾ cup granulated sugar

¾ cup light brown sugar

½ tsp of pure vanilla extract

½ tsp of peppermint extract

2 eggs

1 tbsp milk

Directions:

  1. Preheat oven to 350 degrees
  2. Grease cookie sheets with butter or spray
  3. In a medium mixing bowl whisk together the flour, cocoa powder, baking soda and salt. Set aside
  4. Using a standing mixer or hand mixer beat butter until smooth. Add both sugars and beat on high until light and fluffy.
  5. Add vanilla extract, peppermint extract, eggs and milk and mix on high until smooth
  6. Slowly add in dry ingredients & chocolate chips, mix until combined
  7. Scoop dough with tablespoon and place on cookie sheet
  8. Bake cookies for 10 minutes
  9. Let cool for 4-5 minutes then add Hershey kiss
