More to come on my cookie swap soon but here is the recipe for the cookies I made last week. A few years ago one of my friends made a chocolate peppermint cookie which was delicious and my inspiration for this creation. Originally I wanted to use the candy cane flavored Hershey kisses but my store was out of stock so instead I got classic kisses and crushed up peppermint candy to sprinkle on top. In my opinion they came out well and are a relatively easy cookie to make. Below is the recipe, leave a comment if you give these a try!
Ingredients:
48 Hershey’s Kisses (Preferably candy cane flavored, but any type will work)
2 ¼ cups All-Purpose Flour
⅓ cup Unsweetened Cocoa Powder (used dark chocolate hot chocolate mix)
1 cup of semi-sweet mini chocolate chips
1 tsp baking soda
½ tsp salt
½ cup (1 stick) unsalted butter, softened
¾ cup granulated sugar
¾ cup light brown sugar
½ tsp of pure vanilla extract
½ tsp of peppermint extract
2 eggs
1 tbsp milk

Directions:
- Preheat oven to 350 degrees
- Grease cookie sheets with butter or spray
- In a medium mixing bowl whisk together the flour, cocoa powder, baking soda and salt. Set aside
- Using a standing mixer or hand mixer beat butter until smooth. Add both sugars and beat on high until light and fluffy.
- Add vanilla extract, peppermint extract, eggs and milk and mix on high until smooth
- Slowly add in dry ingredients & chocolate chips, mix until combined
- Scoop dough with tablespoon and place on cookie sheet
- Bake cookies for 10 minutes
